The products
The oldest evidence of the Grappa black truffle dates back to the Republic of Venice; in fact, at the end of the seventeenth century, a local truffle fair was held in Crespano del Grappa and, in a guide dated 1780, the “tartuffole” appear, that is, truffles, produced between Cornuda and Romano d’Ezzelino. Unfortunately, the heavy deforestation carried out in the Grappa area until the end of the 19th century and the subsequent devastation inflicted by the Great War have modified the natural habitat of the truffle, causing the delicious hypogeal fungus to almost disappear. Today, after the gradual reforestation of the Grappa Massif and with the commitment of a group of lovers of the area, the “Black Diamond” has returned to be appreciated on the table, enhanced by the mastery of local restaurateurs. Furthermore, the Grappa Black Truffle is in the running to become a Slow Food Presidium, in whose guide it will soon enter.
Recantina DOC Asolo Montello, a native vine of Montello and Colli Asolani, has been present in these lands since ancient times, although the first written documentation dates back to 1697, when Giacomo Agostinetti in his book “Cento e dieci ricordi che forme il buon fattor di villa”, cites Recantina among the best varieties grown in the Treviso area. A fame that lasted for about two centuries, until the attack of phylloxera caused it to almost completely lose its traces.
Recantina is today the only native vine of Montello that has reached us. Forgotten for many years, it has recently been rediscovered and recultivated thanks to the work of some producers.
