Enveloping, sinuous, it is ideal as an aperitif paired with shellfish and fish starters in general, superb with sushi and sashimi. Speaking of first courses, it goes wonderfully with pasta with shellfish, pesto or vegetables, light risottos in the Mediterranean tradition, and vegetable and fish soups. Moving on to the main courses, it is at its best with the sea, but also with white meats such as chicken and turkey.
